OK, turns out this had nothing (directly) to do with the updates to my
system that I had done. This was just some sort of standard, run of the
mill
GroupWise glitch.

The tech unloaded the POA, forced a rebuild, and then synchronized the
system, and had me do a restart. All worked normally after that.

I made a pretty typical mistake for me, and assumed it was something I
changed.

Interestingly enough though, if I telnet to the server on port 7191, it
STILL says that it's version 7.0.1 instead of 7.0.2. I suspect it's a
cosmetic defect in the SP2.
